Ellie’s Bakery is excited to announce our 2015 cooking class series. Our 2014 series was a hit, and we had so much fun that we are adding even more classes for 2015. Learn how to make your own Honey Beer Bread, or master the art of the French Macaron. Classes include hands-on, personalized instruction from the Ellie’s baking crew, and a light snack. Bread Baking: The Honey Glazed Beer Bread is one of Ellie’s signature items, and makes a phenomenal French Toast or Peanut Butter and Jelly sandwich. Learn how to make this bread at home – we will cover mixing, shaping, proofing, and baking. We will also show you how to use this versatile dough in sweet and savory applications. Hands-on instruction is provided by the Ellie’s baking team.

Learn how to make French macarons from scratch with the Ellie’s bakers. We will walk you through each step, and discuss common problems and solutions as we go. You will leave the class with your very own hand made macarons, and the skills to begin baking these at home.

Chocolate and Coffee | a Perfect Pair: Taste the complex natural flavors of raw chocolate, made by Artisan chocolatiers, Raaka Chocolates. Then participate in a coffee cupping with local roasters, New Harvest Coffee. Learn to detect the subtle nuances of single origin coffees and chocolates, and learn how these flavors can complement and enhance one another.

Pâte à Choux | The Versatile Puff Pastry: Pâte à Choux (pronounced paht-ah-shoo) is the pastry base for the Éclair, profiteroles, and cream puffs. Once you learn the techniques, this is an easy pastry to make, and the New York Times called it “endlessly useful, shockingly uncomplicated and fast to make.” Get hands on instruction from the Ellie’s bakers, along with a discussion of common problems and solutions. Take home sweet and savory pâte à choux creations, and the skills to make these at home.

Cake Decorating 101: A cake is a thing of beauty for the beholder and the creator. Cakes offer an array of creative possibilities, from rustic elegance to the extravagant. In Cake Decorating 101, we will begin with the fundamental elements of cake decorating: how to make your frosting even and smooth, how to fix mistakes, and simple elements that add ZING! The Ellie’s baking team will guide you with personalized, hands-on instruction.

Pie Making Class – Berry Field Trip: This class will begin at a RI farm for a tour, and then we’ll head out to the strawberry fields – but not forever, just long enough to pick some berries. We will head back to Ellie’s for a light lunch, and then turn those fresh berries into delicious summer pies. The Ellie’s bakers will be your personal guide to making a great pie from field to table.

Cheese and Crackers | (and wine, oh my!): Our friends from Narragansett Creamery will join us to teach this hands-on cheese making class. Enjoy your homemade cheese with Ellie’s sweet and savory jams, crackers and freshly baked bread. Learn the art of pairing these Artisan cheeses with wines from The Savory Grape. You’ll be the hostess with the mostest!

In this class, we will look at different techniques and methods to make your cake stand out.  Experiment with textures, lines, piping, and decorative flourishes.  Apple Picking & Preserving:  Meet us at a local farm for a tour and history of the orchard. We’ll pick apples, then head to the Ellie’s kitchen for the second part of this class. The Ellie’s bakers will provide individualized instruction to make fresh apple butter, and show you how to preserve your apple butter (and any other jams) in the classic mason jar.

*This class takes place in two locations: An area farm and at Ellie’s bakery.

Candy Making:  Just in time for Halloween! Candy making is an art, but the basic techniques are employed by beginners and the most experienced artisans alike. Learn these skills, and how you can create your own candies by adding your favorite spices, extracts, and other flavors. We will discuss common problems, necessary tools, and offer hands-on instruction to give you what it takes to begin your creative candy making journey.

Pie Making Class – Pumpkin Field Trip: Nothing says Thanksgiving like a pumpkin pie! Join us at a local farm as we pick out the perfect pumpkins to take back to Ellie’s, where we will bake pies from scratch. We will cover everything you need to know to impress your holiday guests with your pie baking talents, from steaming the pumpkins to shaping the crust. Hands-on instruction provided by the Ellie’s baking staff.

*This class takes place in two locations: A Rhode Island Farm, and at Ellie’s Bakery

Please note that we have a 48 hour cancellation fee.  If a student does not show up for their reserved spot they will be charged the full amount of the class.
