Gingerbread Cookies

With cookie season if full swing, we at Ellie’s want to share one of our favorite seasonal cookie recipes with you: the Gingerbread Cookie. These cookies smell great in the oven, and taste even better. Add in a mug of hot chocolate, and you have a cure for the winter blues, or a perfect snack at the end of a day of sledding. Dark Brown Sugar – ¾ cup, packed (150 grams)

All purpose flour – 3 cups plus 2 Tablespoons (390 grams)

Baking powder – 1 ½ teaspoons

Baking soda – ¾ teaspoon

Salt – ¼ teaspoon

Ground Ginger – 1 Tablespoon

Ground Cinnamon – 1 ¾ teaspoons

Ground Clove – ¼ teaspoon

Butter, soft – 6 Tablespoons (90 grams)

Egg – 1

Unsulfured Molasses – ½ cup (180 grams)

Vanilla Extract – 2 teaspoons
